Half Cow

This order is one-half (1/2) of a Cow. It weighs around 160 pounds, and the cuts come from all sub-primal (both front and back halves). The Purchaser may choose to receive this order in multiple pick-ups, 1/8th at a time, but has to make all pickups (or deliveries) in 3 months.

You will receive the following:

  • Filet Mignon / Tenderloin: 3 pounds
  • Rib Eye and/or New York Steaks: 8-10 pounds
  • Porterhouse and/ or T-bone Steaks: 8-10 pounds
  • Sirloin Steaks: 8-16 pounds
  • Short Ribs and/or Osso Bucco: 8-16 pounds
  • Roasts (Brisket, Rump Roast, London Broil, Chuck Roast, Cross-Rib Roast, Shoulder Roast, Tri Tip): 16-24 pounds
  • Steaks (Chuck Petite Tender, Eye of Round, Flank Steak, Flat Iron, Hanger Steak, Skirt Steak, Cross-Rib Steak, London Broil Steak): 20-40 pounds 
  • Ground Beef / Hamburger Patties / Stew Meat: 90-100 pounds (Note: Ground Beef is the most common, but you may also get the other cuts)
  • Soup Bones (Marrow, Knuckle and Neck): 10-12 pounds
  • All Beef Hot Dogs: 2 Packages
  • Holiday Summer Sausage: 3 packages 3 flavors - 7-ounce packages, while supplies last!



Quarter Cow

This is one quarter (1/4) of a Cow. It weighs around 80 pounds, and the cuts come from all sub-primals (both front and back halves). The Purchaser may choose to receive this order in multiple pick-ups, 1/8th at a time, but has to make all pickups (or deliveries) in 3 months.

You will receive the following:

  • Filet Mignon / Tenderloin: 2 pounds
  • Rib Eye and/or New York Steaks: 5-8 pounds
  • Porterhouse and/ or T-bone Steaks: 5-8 pounds
  • Sirloin Steaks: 5-8 pounds

This is one Eighth (1/8) of a Cow. It weighs around 50 pounds, and the cuts come from all sub-primals (both front and back halves).

You will receive the following:

  • Porterhouse and/ or T-bone Steaks: 2-3 pounds
  • Sirloin Steaks: 1-3 pounds
  • Short Ribs and / or Osso Bucco: 2-4 pounds
  • Roasts (Brisket, Rump Roast, London Broil, Chuck Roast, Cross-Rib Roast, Shoulder Roast, Tri Tip): 3-6 pounds
  • Steaks (Chuck Petite Tender, Eye of Round, Flank Steak, Flat Iron, Hanger Steak, Skirt Steak, Cross-Rib Steak, London Broil Steak): 5-10 pounds

This Eight (1/16) of a Cow. It weighs around 25 pounds, and the parts come from all sub-primal (both front and back halves). We often ship this in a single shipment and we try to get the first shipment to you as soon as possible (most often within 1 week).

  • Rib Eye and / or New York Steaks:  2 pounds
